A short history of the quiche Lorraine

The original recipe was quite simple: just an egg and bacon tart baked in a wood-fired oven. Its origins lie in the Middle Ages among the peasants of Lorraine, a region in north-eastern France. The popularity of the quiche Lorraine spread beyond the borders of Lorraine during the Renaissance. French chefs swiftly adopted the recipe, incorporating it into their repertoire with numerous variations. The quiche Lorraine has become a classic, even emblematic French dish, served in restaurants and at home.

“Apart from the wheat flour, we at Thalias can offer a quiche essentially made with local products. We can supply the cheese, bacon and crème fraiche and work with local producers for the rest. Our ambition is to make the quiche as popular with Cambodians as it is with Europeans,” explains Arnaud Darc, CEO of Thalias.

While Khéma-Thalias has popularized French-inspired charcuterie and cheeses in the Kingdom, the chef in charge of the first trials of this new ‘made in Cambodia’ quiche Lorraine is insistent. The quiche must appeal to Cambodians, especially young people who make up a large majority of Khéma Go’s clientele.

“We experimented with four recipes using different cheeses to find the best combination of flavors that would really appeal to Cambodians”, explains Lina Hak, Director of Operations at Thalias, pointing out that Cambodians prefer strong flavors to mild ones.

Quiche Lorraine, Healthy quiche

Quiche Lorraine is undeniably a rich and tasty dish, but it is also high in calories. A portion of quiche Lorraine (around 100g) supplies between 250 and 350 calories. It also contains macronutrients: 15 to 20 grams of protein, 20 to 25 grams of fat and 10 to 15 grams of carbohydrates for a 100-gram quiche Lorraine. Given that an adult’s calorie requirements are estimated at between 1600 and 2400 calories, quiche Lorraine provides a significant proportion of the daily needs, around 10%.
